Almost every almond you can buy has been treated

Since 2007 it has been federal law that almonds sold through retail are pasteurized, usually with steam and often with propylene oxide, a chemical fumigant. Both are permitted, and both can still be sold to you as natural and raw.

What is done to the almond after harvest is the whole of the difference. It is the one thing worth reading the bag for, and the one thing most bags will not tell you.

Questions we actually get

Why is pasteurization required?

A pair of salmonella outbreaks traced to raw almonds led the USDA to mandate treatment in 2007. It applies to almonds sold through retail channels. Farms are still permitted to sell untreated almonds directly, which is the only reason our Truly Raw exists.

What is PPO, and why do you avoid it?

Propylene oxide is a fumigant gas, and it is the cheapest way to satisfy the treatment mandate at scale. It is permitted and widely used. We use steam instead. It is slower and costs more, and it is not allowed under organic certification anyway.

What is the difference between these almonds?

They come off the same orchards under the same certifications. What separates them is only what happened after harvest. Truly Raw is untreated and only sold direct, All Natural is steam pasteurized, and the Roasted Salted and Roasted Diced are roasted after that.

Are these processed with peanuts or other allergens?

Our products are produced in peanut-free facilities, which is called out on the packaging. Those facilities do process other tree nuts, and shared equipment may be used, with allergen changeover and cleaning protocols required under SQF and BRCGS certification.
