Roasted Salted
Roasted and salted on the farm. The one that disappears fastest.
Roasted Diced
Roasted, then diced. For baking, salads and anything that wants texture.

Skins removed, nothing else changed. For baking, flour and a cleaner finish.
Truly Raw
Never heat treated — these will still sprout. Farm direct only, limited each season.

Grown for the soil, not the yield
Most almonds are pooled from dozens of farms, trucked to a central handler and treated before they reach a shelf. Nobody can tell you which orchard they came from, because nobody knows.
Ours come off our own trees. We keep the orchard floor planted and run sheep through it. It is more work than spraying, and it is why the ground here keeps getting better rather than thinner.
Whichever you buy — raw, roasted, diced or blanched — it is the same orchard and the same family behind it.
Not all raw almonds are raw
Almonds sold through shops in the US have to be treated before they get there. The question is how, and whether anyone can tell you where they were grown.

Gassed with propylene oxide
Treated with propylene oxide (PPO) gas after harvest. Pooled from many farms, so the orchard of origin is unknown.

Before you order
Which one should I buy?
All Natural is the everyday almond and where most people start. Roasted Salted is the snacking one. Roasted Diced is for baking and salads. Blanched has the skins removed for a cleaner finish. Truly Raw is the only one never heat treated, and it is limited.
Are these raw?
Our All Natural, roasted and blanched almonds are steam pasteurized, which US law requires for almonds sold through distribution. They are never treated with fumigant gas. If you want almonds that have never been heat treated at all, that is our Truly Raw, available only direct from the farm.
What is Regenerative Organic Certified®?
It is the highest standard in organic farming. Where USDA Organic tells you what a farm does not use, Regenerative Organic Certified® audits three things together: whether the soil is measurably improving, how the animals are treated, and whether the people working here are treated fairly. How should I store them?
We keep ours in the freezer. The oils stay live and they taste the way they did the day they were packed. A sealed cupboard is fine for a few weeks.
