A walnut's age is the thing that matters
Walnuts carry more polyunsaturated fat than any other common nut. It is what makes them good for you, and it is also what makes them delicate. Those fats oxidize over time, and oxidized fat turns bitter and papery.
Most bags carry no harvest date, no shelling date and no record of how they were stored, because none of that is required.

How to store them
Refrigerate, or freeze if you are keeping them past a month. Walnut oil is delicate and cold is what protects it. This is the single thing that decides whether they still taste good in eight weeks.
Are these raw?
Yes, and unlike almonds there is no federal mandate forcing walnuts to be treated. That means most walnuts are technically raw. What separates ours is that they are never heat treated and never allowed to sit warm.
